My Ricotta Slice

Fresh ricotta is the basis of this quick and easy to make dessert. When you crave for something after dinner, but don't want it to be overly sweet this is the one.

You will need:

500g Fresh Ricotta

330g Sour Cream

100g Butter

6 eggs separated, egg white beaten up, yolk well mixed

12 g Baking Powder

1 cup Flour (all purpose plain)

1/2 cup Sugar

1 lemon zest

Vanilla Extract

Combine the above ingredients, make sure you don't over stir after you put the beaten egg whites in. Pour it in a high side tray. You need to butter and dust the tray before you pour the mixture.

Bake in 200c oven, mine took about 40minutes to bake as it is. The baking time depends on how wet your ricotta was at the first place. You don't want to dry it out, just enough to have some moist center.

I have dusted the top with icing sugar.

If you prefer it to be a bit sweeter, you could add a bit more sugar at the beginning.

Warm or cold, its delicious!
