Coconut and Lemon Slice
Lite and moist, not too sweet, tantalizing taste buds.
250g Butter
430g Sugar
5 Eggs
225g Plain Flour
85g Desiccated Coconut
1 whole lemon zested and juiced
Teaspoon of Vanilla Essence
Teaspoon of Baking Powder
Icing sugar for dusting.
Turn on oven to 200c.
Butter a 20x30cm brownie pan, and dust with flour or use semolina.
Melt the butter in the microwave, measure out all ingredients.
Separate the eggs, mix the sugar the egg yolk, melted butter flour and coconut. Add vanilla extract and lemon grind, plus the juice of one lemon. Add the baking powder.
Mix well. beat the egg whites and gently add to the mixture.
Pour mixture into the prepared pan, and bake for 30-35min on 200c in the oven.
Test with a wooden skewer to make sure it comes out clean.
Let it cool, and dust with icing sugar. Can be stored for 3 days in an airtight container.
