Cauliflower Cream Soup
Creamy, tasty and great reminder that the winter nights are not far away.
As the name suggest, the primary ingredient is fresh cauliflower. As a reminder, you can only make the soup tasty, if your cauliflower is tasty. What I mean here is try to get it from the markets, or if the budget allows, buy organic.
In a small pot, heat some oil with butter, add one chopped onion and 3-4 cloves of fresh garlic. Saute till softens. Add one medium carrot finely chopped, two large potato pealed and finely cut, some stock cubes (2) and salt, pepper, ground nutmeg, parsley. Add the finely chopped cauliflower and fill pot with water till covered. Simmer gently till potato and cauliflower are soft.
Use a hand mixer, and combine the content till smooth. Add fresh cream, stir and taste, add salt or pepper to your liking.
Decorate with fresh parsley, enjoy with toasted bread.
