Slipped Pancakes (Csusztatott Palacsinta)

If you like pancakes, but want to try them in a different way, here it is, my Slipped Pancakes.

8 Eggs

120g Sugar

Pinch of Salt

100g Butter

Vanilla essence

600g Plain Flour

1 Litre Milk

2 Lemon’s zest

 

Separate the eggs, add 20g sugar to the egg whites, the rest to the yolks. Blend well with a mixer. Add the butter and blend. Add all other ingredients gradually till well combined. 

Beat the egg whites and then add to the yolks. 

Make the fillings.

- Grind 200g walnut with 120g Sugar. 

- 400g Orange Jam (Marmelade) 

- 200g very finely grinded dark chocolate. 

These 3 ingredients will be your filling in the layers. 

In a non stick pan over medium heat, pour a large spoonfull of the pancake mix and cook just one side. Slide it to a large plate and spread some marmelade on it. Cook another one sided pancake, and slide it on the top of it, sprinkle some walnut mix on it. Cook the third one sided pancake, and slide it on the top of it and sprinkle with the chocolate. Repeat the process till all the pancake mix used. You should finish with a chocolate top. Mine was 15 layers.

I would serve this warm, cut it like a cake, and pour some chocolate sauce on it, decorate with fresh cream.
