European (Austrian) style breakfast/dinner roll that is very popular in all parts of europe.  Its origin dates back to 1760, made in honour of Franz Joseph (Emperor/ Kaiser) of Austria. Dense white flour dough with a twisted cut on the top. 

This recipe makes about 13 rolls, 10cm diametre.  

Originally made with water only, but i made it with 50% milk to give a softer texture.  

1kg bakers white flour

2.5 teaspoon salt

2.5 teaspoon dry instant yeast

550ml water (I used 50% milk) 

Mix all ingredients, knead till combined. 

Rest for 30minutes. Knead again for 10-15min.  

Let it rest again for 45 minutes.  

Roll it to a thick sausage, and cut it up to two finger thickness. Form a round shape, and use a kaiser press mould (you can buy this online) to form the top.

Bake in a 200c preheated oven for 20-25minutes. 

Enjoy for breakfast, make a sandwich, or serve as a dinner roll.
