Eggplant Dip (Padlizsan krem) - Gluten Free
Love Eggplant dip, you can make it within an hour, and place it on the coffee table to start the conversation with your visitors or friends. Best served with crackers, in fact you can just toadt some bread, and chop it into bite size pieces to dip into this spicy eggplant.
I have used one medium eggplant, brushed with oil and placed onto a tray and cooked in the ofen for 30-40min. Once cooked, cut the skin, and spoon out the flesh. You may disregard any liquid.
The spices - Add 2 cloves of garlic, salt, pepper, hummus, tahini, mayonese, cayenne pepper, cumin, lemon juice.
Mix with a mixer till smooth. Refridgerate overnight to develop harmony with the spices.
