Almond Cookies (gluten free)
If you been waiting for a gluten free but still delicious cookie recipe, here it is!
The ingredients are basic, egg white sugar and almond meal.
3 large egg whites
300g almond meal (course ground if you make your own)
260g caster sugar
1/4 teaspoon vanilla extract
30ml Amaretto (Almond liquor) - optional, but recommended.
Mix ingredients in a bowl. Form walnut size balls in your hand, roll them in caster sugar then icing sugar. Flatten them up on a baking tray (covered with silicon mat or bake paper).
Bake in fan forced oven 200c for 15 minutes. Remove from the oven, let them cool down.
