Almond and Vanilla Crescent (Mandulas Kifli)

This is one of those Christmas Biscuit that we always made at home when I was growing up.

Very easy to make, not much kneading needed, and can be done in two hours.

In a bowl mix: 280g plain flour, 100g almond meal, 100g icing sugar, 2 pinch of salt, half teaspoon vanilla extract, 200g room temperature unsalted butter, 2 egg yolk, 1 lemon zest.

Combine ingredients to form a dough. Divide the dough into 4 x 20cm long rolls and wrap them individually in glad wrap and put them in the fridge for minimum of one hour, but can stay there for two if you prefer.

Turn the oven on to 200c fan forced, cover a baking tray with bake paper.

Slice the 20cm long rolls to 1 cm pieces, roll each piece into a crescent shape, approx 5cm long.

Bake in the oven for 10-15 minutes. I like it when it has a bit of color, so i left it in the oven for 15minutes, but don't burn it.

Once they out of the oven, dust them with icing sugar.

Another option is to dip the two ends of the crescent into melted chocolate.
