Apricot Jam - the king of the Jam family

No year should go past without making a well loved and appreciated home made apricot Jam. Made with beautifully colored fresh New Zealand apricots, sugar and lemon juice and little pectin to get it set. Bottled in a carefully cleaned and proofed (used) jars then sealed with Clearview foil.

The use of this lovely jam in our family has been very versatile, from crepes to dougnuts, to cookies to cakes and not forgetting the breakfast table every morning.

Beats the bought jams every time, and it gets better over the coming months as it sits. I keep it in the fridge as the temperature is a bit hot around here.

Some say there are some people who can eat a whole jar with a spoon in one night... but that's the story, although it could be true...
