Pumkin Soup with Thai Infusion
Tonight i thought lets roll out the good old pumkin. I made this many times and it is a favorite with kids and grown ups alike. I thought lets make the good a bit better, or more precisely little different. I wanted them to say yummy, but also say its interesting.
I prepared the pumkin as I allways did. Peal and chop. I have sauteed a chopped onion over a little butter and olive oil and salt on medium heat, added the pumkin and water. Now comes the interesting part, i have added three fresh kaffir lime leaves as well, and cooked it till the pumkin was very soft. I removed the lime leaves and with an electric hand mixer mixed it to a creamy texture. I have added a little fresh cream to the soup and combined.
Very simple and easy to make, can be served with toasted bread croutons. Enjoy!
