Cherry Slice

Cherry Slice

This is the lightest fluffiest cherry slice you ever had. Can also be made with any sweet or slightly sour fruits like apricot or apple. Quick and easy to make.

Ingredients:

500g Cherries (fresh sour or 1 glass jar)

230g Plain Flour

20g Semolina

1 teaspoon Baking Powder

Pinch of Salt

200g White Sugar

100g Soft Butter

Vanilla extract

3 Eggs

250ml Full Cream Milk

1 lemon zested

Measure out the ingredients.

Mix the flour, semolina baking powder and the salt.

Separete the eggs, divide the sugar ⅔ to the yolks and ⅓ to the whites. Add some vanilla essence to the yolks.

Beat the yolks and the whites separetely.

Gradually add the butter to the yolks mixing constantly with the electric hand mixer. slowly add some milk to this, and gradually add the flour mix adding the milk as well.

Add the lemon zest.

Mix in gently the beaten egg whites.

Prepare the cherries, take ut pit if required. Add approx 2 teaspoon of cinnamon powder and 1-2 tablespoon of sugar with approx 1 table spoon of flour (can also use corn flour here).

Pour the mixture into a baking pan, mine was 24x24x6cm.

Bake in a pre heated 180degC oven for approx 30 minutes. Test with a wooden skewer if it comes out clean.

Dust with icing sugar, and let it cool down a bit before cutting.
