Hungarian Salty Bites (Sos Aprosutemeny)

Before chips and shop bought snack food, Mums and daughters prepared these snacks for many occasions.

Hard to translate name, but these salty and flavored with variety of topping called “Sos Aprosutemeny” is a very popular snack food for parties and gatherings. Offering something on the salty side rather than sweet for those who are sweet consciences. Can be kept in airtight container for weeks.

Ingredients for the dough:

400g Plain Flour (All Purpose)

200g Butter - at room temperature (note: in the olden days they used Lard)

100ml Pure Cream (sour cream can be used as a substitute)

10-12g Salt

2 Large Egg Yolk

For the top:

1 Large Egg Yolk

Topping options:

Finely grated cheese

Sesame seed

Caraway Seed

Poppy Seed (whole, not grinded)

Paprika powder

Mix the dough ingredients together by hand till combined, but do not over do it.

Roll out dough on a sheet of baking paper to approx 15mm thick.

Cover dough with another bake paper, and place on a tray and into the FREEZER.

Leave it in there for 30minutes, but not longer.

While waiting, preheat the oven to 200degC.

After you take it out, brush the top of the dough with the egg yolk, then divide the dough sheet into as many pieces as many toppings you want to use.

I used two toppings, so I divided into two.

Sprinkle the chosen topping onto each dough piece.

Cut the dough sheets to 15 - 20mm rectangle shape with a sharp knife.

Carefully place each rectangle onto a low side baking tray, covered with baking paper.

Bake in the 200degC oven for about 20 minutes.

Let it cool down. Store it in an airtight container.
