Greek Tabbouleh Salad

This salad is perfect addition to your Greek feast, or as a simple healthy exotic and tasty fresh salad with your BBQ or grilled chicken or lamb dinner.

Ingredients:

3/4 cup Medium Bulgur (this is a Turkish dry pasta)

3 tablespoon of fresh lemon juice

3-4 tablespoon Greek extra virgin Olivie oil

250g Cherry Tomatoes cut in half

Half a continental cucumber roughly pealed and cut to 1cm dice

2 Spring Onion thinly sliced

Half a red Onion finely chopped

3/4 cup of Greek Feta Cheese crumbled

1 cup chopped continental parsley

1/4 cup chopped fresh mint leafs

Salt and freshly ground pepper to taste

Optional - Half a cup Kalamatta olives coarsly chopped

Wash, drain and cook the Bulgur like you cook your rice, let it cool.

Mix the lemon juice and the olive oil.

In a larger bowl add all other ingredients.

Pour half of the the lemon and oil mixture on the top, and mix it.

The other half of the oil lemon juice mixture is added before serving.
