London Slice (Londoni szelet)
Three layered shortbred squares topped with apricot jam and walnut foam.
Ingredients:
For the dough:
6 Egg Yolks
300g Flour
200g Sugar
200g Butter
Pinch of Salt
1 Lemon Zested
1 Teaspoon Vanilla Essence
Mix the above ingredients to make a dough.
Place the dough into a 28x36cm rectangle high side baking tray, and spread evenly. Put some baking paper on the bottom of the tray before placing the pastry.
200g smooth Apricot Jam
Spread the apricot jam evenly on the top of the pastry.
Walnut Foam:
6 Egg Whites
200g Sugar
250g Walnut finely grounded
Beat the egg whites with the Sugar till semi soft.
Gently fold in the walnuts.
Spread the walnut foam mix on the top of the apricot jam covered pastry.
Bake in a preheated 200c oven for approx 30minutes.
Let it cool before slicing.
(Note: If you prefer it to be not so sweet, take 50/50g of sugar out of both the dough and the foam.)
