Pacsni - Special Hungarian Dough Pastry

Slightly sweet, lady finger shaped buttery pastry. Was popular before the second world war, and started to become available again after 1958, was very popular in the 60’s and 70’s. It can only be found today in some small private bakeries in Hungary.

Pacsni - Ingredients:

500g Bakers (or Plain) Flour

25g Fresh Yeast (about 10g if you use instant dry yeast)

320ml/g warm Milk

30g Sugar

10g Salt

30g Soft Butter

1 Egg Yolk (large)

2x30g Butter placed in the Freezer

You can make it by hand, I used a dough mixer.

Add the warm milk to the mixer, then add the sugar and the fresh (or dry) yeast.

Use the blender to gently combine. Sprinkle some flour on the top (from the pre- measured flour).

Let it rise (about 10min).

Add the remaining flour, soft butter, egg yolk, and salt. Use the dough hook to combine well.

Once the dough comes off the side wall, its ready.

You should get a 900g dough.

Divide this dough to 3 equal pieces (300g each).

Shape the to a ball, and let them rest for 30minutes.

After this first rest, shape each ball to a rectangle by folding the sides in.

Let them rest for 20 minutes.

After resting, roll each 3 rectangles out to 3 equal size large (approx 5mm thick) rectangle shape.

I used silicon mats to stick to the equal size, you can use baking paper.

Use the frozen butter that you have placed in the fridge earlier, and by using a thick cheese greater, grate one 30g piece of butter on the first pastry sheet spreading evenly.

Place the second dough sheet on the top, pet down the dough with your hand gently.

Grate the second piece of butter (30g) on the top again, and cover with the third dough sheet.

Cut it to rectangle shapes. (use a pizza cutter)

Cover two baking trays with bake paper, gently strech each piece length way and place them on the tray.

Rest them for 15 minutes.

After 15 minutes, you need to strech each piece again length way.

Rest for another 20 minutes.

Spray the top with water.

Bake them in a 220c oven for 10-12 minutes.

Let them cool down before eating.
