Yoghurt Slice with Banana and fresh Strawberries
Here is a perfect slice of cake to satisfy the family’s desire for some “Grandma type” of dessert on the weekend afternoons. Enjoy with a good cup of Coffee.
Ingredients:
6 Eggs
1 + 1/4 Cup of Sugar (300g) (I used castor sugar, or use icing sugar)
1 Cup of vegetable Oil (220g) (I used Sunflower)
1 Cup (250ml) Greek Joghurt
360g Plain Flour
16g Baking Powder
Pinch of Salt
1 teaspoon of Vanilla extract
1 Lemon zested
1 +1/2 fresh medium size Banana - cut into small cubes
500g fresh small Strawberries - cut to quarters
Separate the eggs into two medium size bowls.
Add 3/4 of the sugar to the egg yolks and beat till combined and fluffy.
Add Oil and mix.
Add Joghurt and mix.
Mix the flour with the baking powder, and add to the mix in 4 batches mixing it in between.
Add the banana and mix gently with a spatula.
Beat the eggs whites, add quarter of it to the mixture and combine.
With a spatula gently fold in the rest of the beaten egg whites.
Butter a 24x34cm baking pan or heat proof glass pan, and gently dust with flour.
Pour in the mixture and spread evenly.
Spread the strawberries on the top and gently tap the top with your palm but do not push them in.
Bake in a 200deg preheated oven for 30-40minutes. Take the stick probe to see if it comes out clean. Cover the top with alumfoil if necessary to prevent the top burning.
Dust the top with icing sugar once done, and let it cool down before slicing.
