Kombucha

Kombucha

What is it? Its a naturally fermented fizzy tea drink that is full of good beneficial bacteria.

I made mine in a 3.5 liter glass container.

Boil 4 Liter water in a pot, add 25g Black tea leaves. (you can also use green tea)

Let it sit for about 10 minutes.

Add about 1 cup of white sugar and stir to dissolve.

When it cooled down to room temperature (below 30degC), you need to add the "Scoby".

A kombucha culture (also referred to as a Scoby) looks a little like a pancake although its appearance will change once it is used to brew with. I bought mine, but you can google how to do it from start. Scoby doubles every time you make a kombucha, so you can give it to your friends to start to brew as well.

Also add about 5-600ml commercial natural kombucha drink. If you have unflavored left over from previous batch, you can use that one.

Cover mixture with a cheese cloth (so it can breath), and place it in a dark room at room temperature.

After about 7 days, remove the Scoby and flavor and bottle the drink in airtight bottles.

Let the bottles stand at room temperature for a day, then place them into the fridge for 2-3 days.

You can taste them in day two, the more it sits the more fizzy it gets, and also the alcohol content increases as well.

Have fun and enjoy with moderation.
