Scrambled Eggs Hungarian Style

I have made some Hungarian style scrambled eggs this morning for the family breakfast.

I have used our backyard free range chicken eggs (cant get fresher than that..) beaten up with a fork, added pinch of salt and a little milk.

In the pan I have put some roughly sliced white speck (this is a full fat wood smoked bacon). Once the bacon started to release its flavor, I have added some chopped french shallots. In about two minutes later I have added some sliced fresh red banana chilies. Waited till the chilies start to soften and have a mild char. Added salt and pepper, and poured the scrambled eggs over it. Gently fold in the sides towards the middle on a medium heat.

Decorated with extra cracked pepper, Hungarian powder paprika and chopped Italian parsley.

(Some people also put fresh field mushroom in it, I just did not have that on hand.)
