Potato Bread with Mixed Flours

75% hydration potato sourdough bread with a touch of yeast. Leavened in the fridge overnight, and this is the result. Made with natural unbleached organic flors - White Bakers, white Spelt, Korashan, and Barley. Total of 1kg flours. Beautiful rise (that little instant yeast helped). Contains 30% boiled potato. No sugar, made with natural Celtic Salt. Baked on 250c oven for 60minutes.

I should have waited a little longer before slicing, so it cools down a bit more, but the family could not wait in the morning.
