Ricotta Gugelhupf - (Turos Kuglof)

Simple yeast free dough mixed with fresh Ricotta and baked in a special Gugelhupf form. I must note, this is not the traditional Gugelhupf that is made with a yeast dough, but rather a more simple easy and quick to make version that is also delicious.

You will neeed:

250g Plain Flour

150g Butter (soft)

160g Sugar

12g Baking Powder

Pinch of Salt

250g Fresh (full fat) Ricotta

2 Tablespoon of Sour Cream

4 whole Eggs (large)

1 Lemon zested

1 Orange zested

1 Teaspoon of Vanilla Extract

Mix the above ingredients together in a bowl.

Preheat oven to 180c fan forced.

Put mixture into the form which has been pre-buttered and sprinkled lightly with semolina or flour.

Bake for about 50minutes. Check with a wooden skewer to see if its not doughy.

Let it cool, and dust it with icing sugar. Great with coffee, or with a spoon full of jam.
