The dough made with equal weight of water and flour, producing a hard, but the same time chewy crumb, and a softer inside.
The dough also contains seeds: Sesame, Lynseed (Flax), Chia seed, and quinea flakes. The seeds add a mild nutty flavour to the bread. Not to mention the health benefits.
