If you are looking for something little more than the usual bacon and egg on toast, i like to challenge you to try this french style eggs. No its not a simple scrambled egg. The technique makes it different.

I took two slices of toast bread, cut the sides as your mum did this for your school lunchbox, then cut them to a triangle shape. Slice up two cloves of garlic, and put them in to a pan with generous amount olive oil. Once the oil is hot, fry both sides of the bread triangles, but make sure they don't burn.

Next prepare the egg mixture. Crack two large whole eggs into a small bowl, add a pinch of salt and pepper, and a teaspoon of mild dijon mustard and cream. Gently combine the mixture well with a fork, don't beat it up. Great half a cup gruyere cheese or similar. Heat a non stick egg pan with some clarified butter (Ghee), once its hot, pull it off the stove and add the egg mixture and stir it continuously with a flat wooden spoon or silicon spoon. You must use low heat now on, add some more cream and add the cheese. Keep stirring, don't make it dry up. Add some chopped chives. Plate it on the center top of the fried triangle breads. I suggest decorating it with quartered red baby tomatoes. (i missed that on the picture). Bon Appetit!
