Sourdough Donuts (no yeast)

This doughnut recipe does not contain any commercial yeast, instead it is made with sweet Italian “Lievito Madre” fermented starter culture. While commercial doughnut can be made in one hour, this dough fermented for 24+ hours. Much healthier than quick yeast based dough, gentle to the body digestive system.

Ingredients:

200g Italian “Madre” Starter

250ml Lukewarm Full Cream Milk

100g White Sugar

4 Egg Yolk

5g Salt

70g Melted Butter

550g Flour (min12% protein content - I used Caputo Manitoba and Saccarosso)

Dash of Rum (optional)

For this recipe you will need to have “Lievito Madre” the Italian sweet fermented starter.

(This starter can be made at home from scratch, using flour, honey, olive oil and water. Takes 24 days to make)

Mix the “Madre” with the warm milk first, then add all wet ingredients, except the butter.

Mix in the flour.

Once incorporated, add the butter slowly.

Add the Rum if used.

Make sure all mixed well in the mixer, I run my mixer on medium speed for 8-10min.

Put the dough in a bowl, cover with clean cloth and rest for 6-8 hours on the bench top at room temperature. I started making mine in the morning about 9am, and let it rest till 7pm.

Then gently folded the dough to make a round bowl (no kneading), and place it into the fridge for overnight.

I took the dough out of the fridge at 8am, and let it rest for 1 hour at room temperature.

Then rolled it to about 20mm (2cm) and cut out the round doughnut shapes.

Place the cut out doughnut dough onto a gently oiled tray, and rest till about lunchtime (about 3 hours).

Heat up the oil to 170degC and push a hole with your finger into the middle of the dough and place it into the hot (170C) oil and cover with a lid.

Cook covered for about 1-2min, try not to lift the lid up, maybe use a glass lid.

Once the bottom is cooked and you see the doughnut rise to double size, take the lid off and turn the doughnut upside down, and cook without the lid till the bottom has some colour.

Put them on a paper towel, and dust with icing sugar.

Best healthiest doughnuts you ever have.
