Irish Guinness Cake
A soft cake that blends the slight bitterness of the traditional Irish Guinness beer with the sugar and chocolate, topped with a tangy cream cheese frosting. You will be surprised with the harmony of the taste.
You will need a 20x30cm baking pan, and butter and dust with flour.
Turn on your oven, 160degC (fan forced), and you will be baking the cake for 35minutes.
Ingredients:
Part 1 -
250g Plain Flour
1 ½ Teaspoon Baking Soda (bi-carb soda)
1 ½ Teaspoon Baking Powder
70g Good quality unsweetened Cocoa powder
Pinch of Salt
Part 2 -
100g White Sugar
200g Brown Sugar
2 Large Eggs
1 ½ Teaspoon Vanilla Extract
100ml Vegetable Oil
200g Sour Cream or Greek Yoghurt
300ml Guinness Beer
100ml Boiling water
The Frosting:
100g Soft Butter
150g White Sugar
1 teaspoon Vanilla extract
300g Cream Cheese or similar
Combine Part 1 ingredients.
Start combining Part 2 ingredients as listed, whisking it together.
Now add the mixed part 1 ingredients to part 2.
Pour it into the prepared baking pan, and bake as described for 35min.
Check with a wooden skewer if comes out clean, the cake should be moist and soft to touch but tester skewer should come out clear.
Let the cake cool down completely before applying the frosting on the top.
Make the frosting by creaming the butter with the sugar in a mixer, then add the cream cheese and mix well.
This cake can be stored in the fridge, but best served at room temperature.
