Pickled Onions

Great condiment to have in your fridge for any occasion!

Great on Burgers, Tacos, in salads, or on a cheese platter.

Ingredients:

(Fills a 750ml glass jar.)

2 large Red Onions - (organic holds its colour better and richer taste)

Pickle Juice:

¾ cup of Red Wine Vinegar

¾ cup cold Water

¼ cup white Sugar

1 Tablespoon Salt

1 Teaspoon Cumin Seeds

1 Tablespoon Black Peppercorns

Spices to add into the Jar:

3 Star Anise

1 Red Chilli - cut, seeds removed

Peal, cut in half, and slice with the grain (pole to pole) the two red onions thinly.

Pour boiling water over the sliced onions till covered, and let it stand for 20-30 minutes, than drain.

Let the onions cool down a bit, then place them into a clean glass jar (about 750ml).

Pour the pickling juice over it, till the onions covered with the liquid. (you might end up with leftover liquid)

Add the spices.

You can stir it up to get the spices deeper in the jar.

Close the jar with a lid, and leave it in room temperature for 2-3 hours, then put it in the fridge.

Leave it in the fridge for 24hrs, then ready.

Lasts about a months in the fridge once opened.
