Italian Walnut Cookies - Dolci di Noci

Quick to make, gluten free cookies that even Nonna will approve.

You will only need three Ingredients:

(Makes 50 small bite size cookies, less if you want them bigger)

300g Walnuts (make sure they not rancid)

¾ cup White Sugar

1 Whole Egg - at room temperature beaten up

Icing Sugar - for dusting, but can be left out

I have also used a pinch of salt, 1 teaspoon vanilla essence, rum essence and one orange skin grated.

In the food processor mix together the walnuts with the sugar till combined and the walnut is chopped well.

Add remaining ingredients, and mix with spoon.

I have used a piping bag to pipe out the cookies onto a baking tray covered either with baking paper, or silicon mat.

Bake in pre-heated 200C oven for 12-15 minutes.

Let it cool down, once they cooled down they harden.

Dust with icing sugar.

Option - stick two together with some apricot jam if you prefer.

This is a slight variation to the original Dolci di Noci, but i believe they are even more tastier!
