Simple White Sourdough Bread
I wanted to develop a simple everyday sourdough recipe, that can be prepared in the morning, then finished off with baking at home in the oven. Could have called it a 12 hour sourdough.
Ingredients:
600g Bakers White Flour
15g Salt
300g Sourdough Starter (Live and active)
380ml Cold Water
1 Teaspoon Honey
Preparation:
Combine the ingredients.
Knead with machine (5min)- or by hand (slap&fold method) 5-10min.
(dough weight approx 1270g)
Rest dough for an hour.
Gentle slap and fold 1-3 times after resting. Shape and streatch the top surface of the dough.
Place non stick baking paper into a bread arising basket.
Rest bread dough in the basket till risen (couple of hours)
Place empty cast iron pot with lid in the oven.
Heat oven to 250- 300degC. (hottest you can)
Once dough risen double, gently place dough with the bake paper into the hot cast iron pot, put the lid on.
Bake for 20minutes with lid on.
After 20min, remove the lid reduce oven temperature to 220degC and bake for about another 20min till desired crust darkness.
Remove bread from the pot into a cooling rack.
Let it cool down before slicing.
