Yoghurt Slice

Fresh summery dessert, that is not too sweet, but perfect to satisfy that afternoon dessert craving.

First make a sponge base.

6 Eggs

200g Sugar

200g Plain Flour

Pinch of Salt

Separate the eggs, beat the yolk with the sugar, then beat the white.

Fold the yellow with the white, then use a sieve the flour and fold into the mixture gently till combined.

Spread it on a large baking sheet lined with bake paper, and bake in a pre-heated oven on 200c for 20min.

Let it cool down. Turn it upside down and remove the paper.

The Yoghurt filling:

1kg Vanilla yoghurt

200g fresh cream beaten with a teaspoon of sugar

Gelatine - to set the yoghurt

Fresh or tinned Peach or other similar fruit cut to small pieces.

Prepare the gelatine, and mix with the yoghurt and the cream.

Pour over the sponge base.

Arrange the peaches or choice of fruit on the top.

Let it cool down in the fridge to set for a few hours, preferably overnight.

To make the topping, I used a raspberry jelly mix.

Let it chill in the fridge again till the jelly sets.
