Zucchini Fritters for Breakfast

Easy to make healthy and delicious breakfast meal when you want to make something other than the standard bacon and egg (nothing wrong with that either..).

I made mine with flour, but can also be made with corn flour to be gluten free.

You need to grate one large Zucchini on a medium grade. (skin on)

Add 3 whole eggs, salt and pepper, and approx 3-4 tablespoon of flour of your choice. I have used Khorasan flour, but can be any other.

As an option, you can add a small carrot grated as well, or/and some grated tasty cheese.

With a table spoon, spoon into a fry-pan about a spoon full and fry each side in a pan with little oil till semi firm.

Serve with a dash of good Greek yogurt, or sour cream. I have found it tasty with a small hand-full of my home harvested Alfa-Alfa sprouts. This also serve as a decoration.
