Grandma's Home Made Chocolate Cake
These days we emphasize on the look, how pretty a cake looks. Today I made a traditional old fashioned chocolate cake, where it looks basic but homie, and taste amazing, creamy and delicious. Perhaps its not for you if you are dieting, but its an unresistable temptation.
The sponge, is a basic recipe, so I will only detail the chocolate filling here.
The sponge made of 6 eggs, 200g flour, 200g sugar, pinch of salt and vanilla essence. I used a 24cm round cake pan. Baked on 180c for 20-30min. This particular cake, I have replaced part of the Plain Flour with Korashan Flour and Almond meal, that gave the sponge a nutty taste that goes well with the chocolate, but this way it needs a slightly longer baking time, about 40-45min. Use the stick probe, if its clear, its done.
The chocolate filling is different from the the once we used to these days. It is a cooked chocolate filling.
You need:
4 Eggs
200g Sugar
2 Table spoon rich dark cocoa powder (like Holland or Belgian)
200g dark cooking chocolate - brake into small pieces
250g Butter
In a stainless bowl, mix the whole eggs with the cocoa powder and the sugar.
Put the bowl over a pot with boiling water and stir with a whisk continually until it starts to thicken and warms up. Do not boil. Add chocolate and stir till melts. Let it cool down a bit, then add the butter gradually while stirring with the whisk.
As an option, now you can add some alcohol for flavoring, I have used Cointreau (orange liquor).
Put into the fridge to cool to a creamy consistency, so you can spread it over the sponge layers.
