Tuscan Butter Salmon
This is not my own recipe, but very yummy and quick to make, perfect for a midweek family dinner.
I have used 3 pieces of Salmon (skin on), the tail piece have less chance of a bone if you prefer to be sure. Salt the Salmon both sides, and cook 6minutes on the meat side and 2-3minutes on the skin side. Remove fish from the pan, add 3 tablespoon of butter with a little olive oil. Add 3 cloves of chopped garlic, half cut cherry tomatoes, salt, pepper, hand-full of baby spinach leaves, give it a stir or two. Add fresh cream, grated parmesan cheese, chopped parsley, pinch of oregano, few fresh basil leaves, and a dash of dry white wine, and simmer for 3 minutes. Add the pre-cooked fish and simmer on low for another 3 minutes. Garnish with fresh basil leaves.
