Coco and Almond Energy Balls - Protein Balls

Very easy to put together, great for kids lunchboxes. Does not necessarily need to be kept in the fridge. Provides energy during the day, yummy and healthy option.

Roast raw, skin on almond kernels (100g) on a halt teaspoon of oil.. (I used peanut oil).

Roast till have a slight burned skin. Empty pan on a paper towel and let the almonds cool down

Put almonds in a food processor, chop for about 20sec till the desired roughness achieved.

Add:

200g pitted good quality large (Medjool) dates

1 tablespoon natural Almond spread (If you find a roasted version its even better) (Peanut spread can be used alternatively)

2 tablespoon of raw cocoa powder - this will give the lovely chocolaty taste, so use the best quality you can get.

1 tablespoon of coconut oil - this will bind things together.

1 pinch of salt

As an option, as I have a sweet tooth… I have also added 1 tablespoon of natural honey.

Blend all together in the blender.

Form balls with your hand, and refrigerate. I ended up with 21 smallish balls.

I have used 98% milk protein powder to give the balls a nice finish. (can be left out)

Variations of these type of balls are endless.
