French Onion Soup
I remember when we were in Paris on a holiday, we had these french onion soup every day. We just could not get enough of it. They were absolutely delicious. This is a close copy of that, although you cant beat the taste and the atmosphere there.
Slightly brown 60g of Butter and 2 table spoon of olive oil in a pan. Add 1kg pealed and roughly chopped brown onion and 1 teaspoon of salt.
Cover with a lid, and on low heat simmer for about 45 minutes until the onion is tender.
Add 2 teaspoon of brown sugar and cook a further 10 minutes.
Add 2 tablespoon of plain flour and cook for another 2-3 minutes.
Add 4 cups (1Litre) of good quality liquid beef stock and 2 cups (500ml) water.
Bring it to the boil, and cook for about 15 minutes.
Spoon out the soup too a small bowl or french soup cup, place a slightly toasted buttered slice of bread on the top, and add generous amount of grated cheese. I used Pecorino, Parmesan, and cheddar. Put it under the grill till melts to the desired color. Serve immediately.
