Hand Crafted Turkish Bread

This is a remake of my Turkish Bread. I love the seeds on the top, the soft inside hiding under the thin crust.

Ingredients:

500g Plain Four

7g Instant Dry Yeast

1 Teaspoon Sugar

1 Teaspoon Salt

1 Tablespoon Olive Oil

200g Poolish (kovasz) -(leftover bread dough

375ml warm water

Mix all above ingredients. Let it rest for 15minutes.

Knead, using some flour for under the dough.

Rest for 1 hour.

The dough should be about 1kg.

Half the dough.

Stretch out both pieces on a baking tray covered with bake paper of silicon mat.

Sprinkle the top with some olive oil, brush with one egg yolk.

Sprinkle some sesame seed and Nigella seed on the top.

Let it rest for 30 minutes.

Bake on 200c for 20-25 minutes.
