Sour Cherry Soup
This is as the name say it a soup made with sour cherrys and it is often enjoyed in Hungary on a hot summer day.
This time i have used a Hungarian made Cherry compote from a glass jar that i found in the supermarket.
I have used 3 jars of Cherry and some water on the stove, and bring it to boil gently. Add about 200g sugar, a cup of red wine, 2cinnamon stick and half lemon zested plus juiced. I have added some ground cloves too. After 5-10 minutes of gentle boiling, remove 80% of the cherries and the cinnamon stick.
Mix two tablespoon of plain flour with some fresh cream and water and add to the soup. Stir and boil gently for 5minutes. Let it cool down, and then add back the cherries. Chill the whole soup well, serve with a dash of whipped cream.
